I pop it in the oven just before the party guests arrive, until it’s hot and bubbly and the cheese is irresistibly gooey, with bacon flavor in every bite. This dip is ridiculously easy to make and perfect for parties, game day, and entertaining.

Cooked corn – You can use steamed fresh corn, cut off the cob (my favorite!), canned corn, or frozen, cooked corn for this easy dip.
Bacon bits – Make your own bacon bits for the best flavor. In a hurry? You can use premade bacon bits.
Sour cream – Full fat sour cream will give you the richest flavor, but you can also use low-fat sour cream if you like.
Shredded cheese – Use your favorite sharp, medium, or mild cheddar, or a blend of cheddar and monterey jack cheese like I did here.
Ranch dip mix – Look for this mix near the chips or the salad dressing section at the grocery store.
(Optional) Chopped green onions or fresh chives for garnish.
Step by Step Instructions
STEP ONE: In a mixing bowl, combine the sour cream and ranch dip and stir well.
STEP TWO: Add the corn, bacon bits, and 1 1/2 cups of the cheese and stir well to blend.

STEP THREE: Transfer mixture to an ovenproof baking dish. Smooth the top and sprinkle with the remaining cheese.

STEP FOUR: Bake until the dip is hot and bubbling and the cheese is melted, about 20 minutes.
Optional step – If you would like to brown the top of the dip, heat the oven broiler on high and cook just for a minute or two until golden brown.
If you like, you can sprinkle chopped chives or green onions on top for extra flavor and a dash of color. Serve and enjoy!

Recipe Variations
To give this cheesy dip a spicy kick, add chopped, seeded jalapeños or Anaheim peppers.
For a tangier dip, substitute 1/2 cup mayonnaise or softened cream cheese for 1/2 cup of the sour cream.
How to Store Leftovers
Cover any leftover corn cheese dip tightly and refrigerate for up to 3 days.
Cover with a lid or aluminum foil and reheat in a 350 degree F oven until hot and bubbly.
