Bacon  Onion Jam

Let's Make

– 1 pound bacon, chopped – 3 yellow onions, chopped – 1/4 cup Balsamic vinegar – 3 tablespoons brown sugar – 1 1/2 teaspoons Dijon mustard – salt and pepper, to taste

1. Cook the chopped bacon in a heavy pot over medium heat.

2. Leave 3 tablespoons bacon fat in the pan and add the chopped onions.

3. Cook, stirring frequently, until the onions are browned and caramelized, about 15 minutes.

4 Add the balsamic vinegar, brown sugar and mustard, and cook until thick, about 30-40 mins.

5. Adjust seasonings, cool, and spoon into a jar or serving dish.

6. Serve and Enjoy!

Delicious served warm over Brie cheese with crackers!
