1. Preheat your smoker or pellet grill to 350 degrees F with medium smoke.
Thick-sliced bacon is best for cooking in the smoker.

Line a baking sheet with aluminum foil.

Place a wire baking rack on the pan.
Lay the bacon slices on the rack. It's okay if they touch, as the bacon strips will shrink during smoking.
Put pan in the smoker or pellet grill and cook, turning once, until bacon is crispy, about 30 minutes.
When bacon is golden brown and crispy, remove from smoker.
8. Cool and drain bacon strips on a double layer of paper towels.
9. Arrange on a serving platter and ENJOY!
