Maple Bacon Pancakes

Ingredients

Bacon All purpose flour Sugar Baking powder Salt Baking soda Milk Butter Maple syrup Maple extract Eggs

Step one

Cook the chopped bacon in a large skillet over medium heat.

Step TWO

When the bacon is browned and crispy, use a slotted spoon to transfer it to a double layer of paper towels to drain.

Step THREE

Whisk the flour, sugar, baking powder, baking soda and salt together in a bowl.

Step four

Pour the milk, butter, maple syrup, and maple extract in a saucepan. Heat just until the butter melts, whisking occasionally. Remove from heat and cool to room temperature.

Step FIVE

Beat the eggs in a medium bowl with a whisk. Slowly add the cooled milk mixture and whisk until combined.

Step six

Make a well in the flour mixture. Add the milk mixture and stir just until moistened.

Step seven

Heat your electric griddle and spray with cooking spray. Pour the batter on the hot griddle and spread in a circle.

Step eight

Cook until bubbles form on top and sprinkle bacon pieces evenly over the pancake and gently pat it in place with your fingertips.

Step nine

Flip the pancake over, and continue cooking until the bottom of the pancake is lightly browned.

Step ten

Serve the pancakes warm with butter and real maple syrup, and sprinkle with some of the bacon bits.
