Bacon Tater Tot Casserole for Breakfast!

"Our favorite breakfast casserole! The combination of tater tots, bacon, cheese and sausage is amazing." - Sydney

- 32 oz. frozen tater tots – 1 lb. bacon  – 1/2 lb. sausage – 1 T. butter – 2 leeks  – 8 eggs – 1/3 cup milk – salt and pepper  - 2 cups shredded cheddar cheese – 1/4 cup shredded Parmesan cheese


1. Cook the tater tots for 20 minutes in a 450 degree F oven.


2. Cook the chopped bacon in a skillet over medium heat.

3. Cook the sausage over medium heat until browned.

4. Cook the chopped leeks in butter until tender, about 7 to 8 minutes

5. Arrange the cooked tater tots in the prepared baking dish.

6. Add the bacon, sausage and leeks. Pour the egg and milk mixture evenly over.

7. Sprinkle with the cheeses. Cook until eggs are set and top is browned, about 30 minutes.

8. Serve and Enjoy!
