This easy recipe for warm potato salad with bacon features tender potatoes and crispy bacon with the most flavorful hot bacon salad dressing ever.


– 1 pound bacon – 3 pounds potatoes – 1 sweet yellow onion – 3 tablespoons flour – 3/4 cup water – 1/3 cup vinegar – 1 tablespoon sugar – 1 tablespoon brown sugar – salt and pepper – chopped chives

Step 1

Chop the bacon and put it in a large skillet over medium heat.

Step 2

Cook the bacon until golden brown, and  transfer to paper towels to drain.

Step 3

Peel the potatoes ,and cut in bite-sized 1/4-inch slices.

Step 4

Cook potatoes in water over medium-high heat until water simmers and potatoes are tender, about 20-25 minutes.

Step 5

Heat reserved bacon drippings in a skillet, and  add onions. Cook, stirring occasionally, until tender  and just starting to brown.

Step 6

Sprinkle with the flour and cook for 1 minute. Add the water, sugar, and vinegar, Whisk to blend and cook until thickened.

Step 7

When the potatoes are tender, pour out the cooking water and drain potatoes in a colander.

Step 8

Add the potatoes to the dressing along with the cooked bacon and stir to combine.
