Bacon Wrapped Meatloaf Recipe

– 11 slices smoked bacon – 1.5 pounds ground chuck – 1/3 cup Italian bread crumbs – 2 eggs lightly beaten – 1/3 cup chopped onion – 1/3 cup chopped green pepper -  2 teaspoons Worcestershire sauce  – 1 teaspoon salt – 1/2 teaspoon ground black pepper – 1/3 cup barbecue sauce

1. Lay 5 slices bacon on parchment paper. Begin weaving with one strip of bacon.

2. Continue weaving, over and under, with remaining bacon.

3. Place the weave and parchment paper on a baking sheet and bake at 350 degrees F for 15 minutes.

4. Meanwhile, combine meatloaf ingredients and form into an oval loaf.

5. Let the bacon weave cool for 15 minutes and blot any excess grease.

6. Weap meatloaf with the bacon weave, tucking it under and securing with toothpicks.

7. Brush with BBQ sauce and bake to an internal temp of 160 degrees, about 1 hour.
