How to Cut and Store Leftover Turkey for Sandwiches

Did you end up with a bounty of turkey after your Thanksgiving feast? Here’s how to make the most of it so you can enjoy it for days to come.
Be sure to tightly wrap and refrigerate leftover turkey within 2 hours of serving. You can go ahead and slice all the turkey before storing, or you can wrap up the larger pieces and slice them as needed.
For sandwiches, I recommend cutting the turkey with a sharp knife in 1/4-inch slices. Then you can stack as many slices as you like on your hoagie.
According the the USDA, leftover turkey can be safely enjoyed 3 to 4 days after cooking. For longer storage, tightly wrap the turkey in a sealed container or zip-top freezer bag and freeze it.
Although it’s safe to eat for up to 6 months after freezing, in our experience the quality and flavor of frozen turkey is best if you eat it within 1 to 2 months at the most.
The best way to thaw frozen turkey is to let it slowly defrost in the refrigerator overnight.
